Does anyone have a good artichoke dip recipe that does not call for mayo or sour cream? (allergies in my house)
I'm looking for something that's got a cheesy base to it. (like Velveeta, or cheddar or a white cheese....or a mix of a yellowy cheese and a white cheese) It's also got to be fairly easy, and pretty tasty. I may have to head down to the Irish pub where I had my first taste of artichoke dip...I think they use Velveeta or something similar to it, and it's also got spinach in it, and they serve it hot in a bread bowl (soft, white bread) with potato chips and carrots. *droooool* oh geeze, I'm making myself hungrier now....argh! I wonder if I can talk my dad into going to the pub. (Brazenhead Pub) Oh darnit...The Turfmen were playing last night, and I missed them!...that would have been a good night to go there. |

Are you SWANKing? If so I'm sure you know how to make the adjustments of no-fat milk, olive oil and fat free cheese.
This is a very non-scientific recipe but its similar to what I have had at Mexican restaurants. I serve it with tortilla chips and a side dish of salsa. It goes something like this: Like making a roux: Saute 1 minced garlic clove, 1/2 cup chopped onion and chopped artichokes (expensive and although not necessary delicious) in 2 tbs. butter. Add 2 Tbs.flour and stir to mix. Add 1 1/2 cups of milk cook over medium heat, stirring often until bubbly and thickened. Cook one package of frozen creamed spinach (probably 10-12oz) as directed. Mix into the onion cream sauce. Add salt and pepper if desired. Pour in small casserole dish, top with Parmesean and Provolone (or whatever) cheese, sprinkle top with paprika and bake at 350 until bubbly.

Oh Thank You, I forgot I had a jar of Creamy Spinach dip in the fridge. Love this stuff.

After I posted the original message in this thread, I found out that one of my uncles' who has been sick with renal cell carcinoma is in the hospital. (he has pneumonia) and apparently he hasnt been doing all that great, so I think he's going to be not around much longer. and, of course, he's on the side of the family that went freaking insane a few years ago and we dont talk to them anymore...well, we would talk to them, if they'd talk to us...but apparently they've hated us for years and just never got around to telling my parents or my sister or me. I guess we're not supposed to know that he's in the hospital. One of my cousins (not an offspring from that side of the family) tried calling my aunt (dad's little sister) and she wouldnt talk to her. Just told her that my uncle is just fine, nothing wrong...except a little paralysis of his vocal cords and that he couldnt talk to my cousin. I'm not sure how to feel about him being sick and probably about to die. I have stayed away from him for several years because of a highly inappropriate comment that he made to me once about something when I was a child. (had something to do with me sitting on his lap and playing, and some weird sexual connotation and it just creeped me seriously) That side of the family has been a bit...nasty, to my side of the family and the big falling out happened when my grandmother died and they all freaked because my dad was the executor of the will and they thought he was going to somehow break the law and keep all the money. (so he let one of his sisters be the executor and she ended up screwing everyone else out of some of the money) So, now I guess my stomach knew I was going to want comfort food before the rest of me knew about it. I think I'll go load up on stuff to make artichoke dip tomorrow night and see how many different kinds of foods taste good with artichoke dip all weekend. Either that or I'm heading to the pub with a Harry Potter book and get some dip there and a root beer and sit and read for a few hours while munching on dip. |
