I posted this in the food section of Social Chat, but thought I might get some more responses here!
Our Multiple Sclerosis Chapter is putting together a cookbook for people who have MS or any type of disability who have difficulty using cooking utensils/cookware. We have not found one currently on the market. We are putting on a cooking demonstration this fall and want to incorporate ideas using adaptive equipment. If you have modified something or found something that you use, or modified a recipe to make it easier to fix, that is what we are looking for! If you have ideas, please share them. We have a local Chef who has volunteered his time for our Cooking Seminar. It has been a huge success in the past and this year our focus is modifying recipes to accommodate our needs. Thanks everyone for your input. It is very much appreciated. I will let you know how it all turns out!

Utensil ideas: Paper bowls, plates & cups. Plastic fork/spoons. ================================================== ====== Easy Fast Food with these tools: (1) HEARTY SOUP: Can of soup (with a pop-top so that a can opener is not needed). Ramen noodles (from the "top Ramen" soup packet). Process: Pour can of soup in a bowl. Add the dried Ramen noodles (do not use the flavor packet). Add a handful of frozen vegetables. Microwave for 4 minutes. (2) Salmon/Halibut, Vegetables and rice. Pre-cut salmon filet. Frozen vegetables. Instant rice. Soy sauce. Process: Place folded paper towel in bottom of a paper bowl. Place one small salmon filet in a bowl. Add a dash of soy sauce. Microwave for 2 minutes. Microwave instant rice in a paper bowl. Microwave frozen vegetables in a paper bowl. Place all three on a paper plate for a healthful dinner. *When I think of more, I will post them here. -Vic |

Potato Chip Chicken
Boneless, skinless chicken breasts or tenders Bag of "normal" chips (think plain old Wise or Utz - not low fat, ridges, etc) Seasoned salt or Paprika melted butter/margarine Rinse chicken and shake off (or drop a few times in sink due to numbness) Drag chicken thru melted butter (IE: chase around until you grab the little sucker). Drip off excess butter. Sit on chips to crush (works really well under seat cushion of my wheelchair) Coat buttery chicken in crushed chips (Tremors help with the shaking/coating) Put chicken on tinfoiled cookie sheet. Sprinkle with seasoned salt or paprika (gives cheery color and a bit of flavor). *or use garlic salt or lemon pepper combo Cook 400 degrees for 15-20 minutes Yummy and kids love it. Clean up is a snap- throw out chip bag, toss butter bowl in dishwasher (if you didn't break it) and throw tinfoil in garbage.

Easy and healthy breakfast or snack
1 Thomas' Hearty grains double fiber honey wheat English Muffin 2-3 tablespoons Smart Balance Omega natural peanut butter All-fruit preserves, any flavor split the muffin with a fork. Toast and spread with Smart Balance peanut butter. Top with all-fruit preserves. Enjoy! This is full of flax that gives you fiber and healthy omega 3's. It's easy to make, delicious, and a great breakfast. I have it each day when I work.
