I guess you all know I have recipes --- thousands of recipes.
This is my current favorite ..... PINEAPPLE BANANA NUT CAKE PREHEAT OVEN 350* Bake 30-40 mins check after 30 min In a large bowl mix together well : 3 cups flour, 2 cups sugar, 1 teas. baking soda, 1 teas.cinnamon, 1/2 teas. salt In another bowl mix together to blend well: 1 cup oil, 2 cups sliced bananas, 1 cup undrained crushed pineapple, 1 packed cup of coconut, 3 eggs, 2 teas. vanilla, 1 cup chopped walnuts, stir in flour mixture and mix well. pour into a greased 9x13 or 2 -9" cake pans bake as instructed above remove from cake pans and cool completely on cooling racks.I cooled in 9x13 pan and served from cake pan. When completely cool frost with frosting below. FROSTING: 2-8oz. cream cheese,2 sticks unsalted butter at room temperature,2 teas. vanilla, 3 cups powder sugar. This makes a large amout of frosting,I was able to frost the 9x13 cake left in the pan with 1/2 frosting recipe. Beat together the cream cheese and butter until completely mixed, beat in vanilla, then add and beat in one cup of powder sugar at a time beating well after each addition.Frost cake.More nuts can be sprinkled on top if desired.Store cake in fridge. This is a rich moist cake ,just wonderful. I hope you enjoy this! I make this in cupcakes -- It makes about 40 cupcakes and takes just 1/2 of the frosting recipe. A 9x13 cake takes just 1/2 of the frosting.

Your bread sounds delicious Wren!
Alffe, yes, you freeze bananas with their skins on. I only freeze those that get over-ripe. I'll sometimes buy them that way (if they are reduced in price) - and they go straight into the freezer. When you take them out to thaw, they are very black and runny with their juices. The skins slip right off. It always amazes me that we are such a "universal" group of people here - all over the world, we have different ways of doing things - and so many words have different meanings! Aren't we lucky that we have this special place to bond, learn and grow! |

I made the corn pudding this morning! It is absolutely wonderful. Some of those receipies printed in there are really good. Do try this stuff, the texture is really yummy. Even went to walmart to shop for ingredients this a.m. so I could make it. Worth the time, and it really didn't take long at all. I made half the amount, as it serves alot. Go for it! ginnie

LOLing at the pet owners!
I cannot believe how jobs have been coming my way... I've been a busy Addy. I have another interview this coming Monday (as an "organizer's assistant"!!!!!! - I am very excited about this opportunity as I love organizing! - especially other people's things!) I'm also doing this part-time: Mystery Shopper and Merchandiser - both for different companies. Fun stuff - working on my own, choosing the dates and times that I'm available. Its been tough getting "here"... and I'm not really "there" yet... but I can almost "touch" it! Addy |
