Hi everyone! I started working in mid-Feb to obtain family health coverage. Nearly six weeks ago I was able to drop down to 20 hours per week and retain health bennies! Yea! So I still consider myself a ‘mostly’ SAH, HS mom.

7yo ds picked lots of morel mushrooms in our woods the other day. He loves to eat them too! Sauteed in olive oil. Ewww! I was raised eating them heavily-battered and deep-fried! LOL

We may have found part of the problem here. I think I mentioned that dh has taken over quite a bit of the cooking since I went back to work (when my fatigue worsened). Well, I discovered that he has not been washing the bulk bin rice and buckwheat groats before cooking them! I’m thinking we could have a possible cross contamination issue…?

We started back on probiotics last week too. I finally found some vegan/gf for me and some vegan/gf/corn-free/soy-free for ds! Actually I found them a while back – I just waited to order them until my favorite on-line retailer got them in for me!

Alas, Kim I just cannot fathom how to go about doing an elimination diet. I can count on one hand the number of foods my son eats “solo”. Heck, even with apples, he insists on eating them with nut butter or cinnamon! Almost everything we eat is a combination of multiple ingredients. I am toying with the idea of doing it for just me…I can eat apples plain.

Default Newbie here and GF diet!

Hi....I came here last year when BT failed...its down AGAIN while a few others are able to log on...we have email connections!
I started a GF diet after many gentle nudgings for so long...I have Crohns disease, missing several feet, and leg, eye ect! Not really....just missing a few feet of small intestines after long bout of severe pain and pill camera gettint stuck inside AND also discovered the cause of severe anemia (5.1 hbg )...yes it was that low! 2+ years of searching...turned up an AVM which basically anuerism like mass...baseball sized...yipes!
After all that mess...I only got worse! Went downhill from there with muscle weakness, fatigue, then Neuropathy over my entire body. SPent another 2 years suffering then entire summer from h3LL 100% bedridden...Rose helped me with this...B12! But not the 100% cure was needing...so began the GF diet 1st week of April...think the 6th...I didn't write it down...oh well.
I've been having a few "mishaps"...some accidental, some shear defiance, who am I fooling?!
Upside is I've been D-rea free for several weeks now...thats a first in can't remember when....and the PN is down to very slight burn on bottoms of my feet!
I'm finding this GF diet rather hard as we're trying to stay total vegan,,,,eat nothing with a face or has a mother! It would be soooo easy just to toss a peice of meat on the barby! Upside is...my husband will no longer be needing the bypass surgery like other men in his family...its stopped his chest pain in its tracts! Its called CHIP program held across the US.
We eat food only as grown...is hard to adhere to. And grinding a batch of nuts and piles of grains isn't all that easy when you have Chronic fatigue, muscle and joint pain from Fibromyalgia, Hashi-motos thyroid disease and few other health issues....damaged nerve in my gallbladder...am under pain managment.
My gastro keeps looking for Celiac disease with me...is open to any suggestions...what a sweetie! Anyway....I am here!
We live out in the country...I love it here!! Its awesome!
As you can see by these pictures...we're a bit horse crazy! My grandmonkey keeps me going...is my reason for living!

Sounds like, largely, things are on the upswing. I'm glad to hear it.

My son also only ate a handful of foods at the beginning. It sure made a TED a lot easier. The thing about it though is that the child does seem to expand their diet as they go. For example, my son will now eat zucchini pizza dough and peppers (salsa)- whereas he wouldn't before. He will actually ask to go and get these things (pick them out himself) at the grocery store.

People do not usually do TED's unless they are really ready to commit. If you ever get to that place, I will look forward to hearing about your results (yours or ds's).

Cheryl: Welcome! I am glad to hear that you are feeling better. There may be some dips in the road ahead (invariable mistakes) but the general direction that most people go, after realizing the impact of diet, is 'up'. (LOVED the photos!)

Default vegan GF diet....ug!

This is really hard for me because I'm a huge wheat lover...big time grain girl!
I've made my own wheat steaks to die for tasty!
Better than any prime rib! But thats my taste buds talking!
I've been mostly GF for a month now...no D-reah!...but still have loads of gut pain and gassss!
Like cival war going on inside....I hear the muskets firing and smell the gun powder! ....I think once my body adjust to this GF diet, this will quiet down a bit...hope so...I nearly killed my DH other night...he woke up gasping! Its that bad.
Gosh....why couldn't this sensitivity be to something distasteful like turnips or lima beans....why Wheat, Oats, Barley?!??
Anyone can live without turnips...but try a vegan diet without wheat, oats, barley?!! Sigh......... Rice gets a little old day after day!
My blood test shows a high wheat allergy and corn also shows about half as much allergic reaction.
I keep finding myself "cheating" with a bite here and there....how stupid is this as its only hurting....ME!
Anyone else struggle with same issues?
Any good recipe's for a savory "roast"?...something that is a little more on the meat loaf look/taste?
Ive been grinding up pecans, tofu, TVP, gf oats, cashew cream with onions, celery and sweet peppers....top it with sweetend tomato sauce, then bake it.
But don't really find this the taste I'm wanting.

Do any of you find the GF oats a little on the bitter side?
How do they remove gluten from oats...are they grown that way?
Or is there little gnomes that strips off the glue-ton from the oats?
Gosh forbid they use chemicals to remove it!

Not much has changed in my part of the world. I'm still job-hunting, tho I start part-time at a new chiro office next week. My ex-dh is doing well, no sign of rejection and it's been 6 months since he got his new heart.

Went to a GF cooking class a couple weeks ago. I was rather disappointed - she made 4 or 5 items, and the only one that wasn't naturally GF was banana muffins. I guess I was expecting more of the gluteny-type foods that have been changed to GF. What was worse, she was making some sort of stir-fry and used tamari that had wheat in it! We stopped her and got another bottle that we made sure was GF, but I was not impressed, and I think the rest of the group felt the same way.


Cheryl: I believe Valerie posted a recipe on OBT for Nut Seed Burgers. It's not a "roast" or "meatloaf", but I thought they were pretty good, and I'm not vegetarian. I don't want to post it, since it's not mine, so let me know if you want it and I will PM it to you.

Try quinoa, buckwheat and rice. Potatoes too but probably not if you have joint pain.

Get all gluten out of your house. That is often the only way.

Oats are not considered a gluten product. They are considered to be contaminated by wheat, etc. from fields, mills, etc.

That said, many people have a very big, bad reaction to something else in oats. Enough people that many gs people avoid even the gf oats... just because it has been proven to cause inflammation... not Marsh lesions... but really, who wants to risk inflammation?

Crytears, we are also gf and vegan, or I should say strict vegetarian, as we do consume some honey. This is a loaf recipe that we really like, especially after it has been refrigerated. Then we slice it and fry it. For the first night when its fresh out of the oven, I serve it with cashew gravy and various sides of vegetables. Let me know if you want my recipe for the gravy.

Lentil Loaf

We like this even better the second day, when we slice it and fry it. I like mine with ketchup; dh likes his fried with Bragg’s, onions, and pumpkin/sunflower seeds!

Ingredients:
 1 1/2 cups lentils
 1 cup brown rice
 ˝ cup wild rice
 6 cups water
 1 small onion
 1 clove garlic
 2 stalks celery
 2 teaspoons sage
 1/2 cup chopped walnuts (I chop mine in food processor)
 1 tablespoon apple cider vinegar
 3 tablespoons ground flax seeds mixed with 5 tablespoons warm water
 fresh ground black pepper and sea salt

Directions:
Preheat oven to 350 F.

Wash lentils and rice, then cook together in 6 cups of water for 45 minutes.

Finely chop onion, garlic and celery. Saute until the onion is translucent. Add the sage.

Combine all ingredients in a large bowl (or stockpot) and mix well. Lightly oil a casserole dish and fill it with the mixture. Press down. Bake 40 minutes covered, 10 minutes uncovered. Let stand for 5-10 minutes before cutting and serving.

I have to confess, I don't how you vegans do it. There are so many things that are staples in your diet that I react to: Legumes, rice, corn, basically all grains. I'd be down to eating almost nothing.

That's what I thought about going gluten free.

It's all in practise... I know vegans who limit their complex sugar intake and seem to be doing fine.

Although count me in with you... I'm a big meat eater and feel really tired without it. To try and live gently on the planet though, I do try and make sure we have at least one meatless day per week.
