Thanx for all the responses. Gives me some ideas. There does seem to be some confusion tho, my kids are grown now and no longer live with me. The oil fire happend when I was first dx, 20 yrs ago. I am also Celiac so I do wonder if Schwanns has gluten free food?? I will have to check. I am normally alone. Well, dh works midnights and sleeps all day, so Im kinda alone all the time. He wakes for dinner and then leaves for work. He is also 85% deaf so screaming for help, he doesnt always hear me. Dont qualify for medicare for another 2 1/2 yrs, so no go on MoW. Oh and Kicker, yes, healthier diet. No prepackaged foods, nothing processed. I use to eat alot of junk food and now its all the good stuff. I indulge in fried cucumbers maybe 3 times a year.

Hi KL, I am also glad that you and house are well. What a scare.

I have left a whistling kettle on the stove and got on a plane and flew from Boston to Chicago. SO found the flame still on, absolutely dry kettle w a melted lid that had fallen inside. OMG. The second time it happen I was home but, you know, you go out on the patio for a moment and see a neighbor then go around the fence..... I can't hear the kettle if I am not in the house.

I now use a small timer I got for meditation. It has a clip on the back and I clip it to my clothes. I will hear it no matter where I end up.

Regarding an oil fire, put the lid on the pan or the pan in the oven if you can w/o burning yourself.

And, pls tell me about fried cucumbers. Do they taste similar to fried zucchini?

Ann, they are soooo delicious!! I cut em in slices and dip them in egg or just egg whites, then dip them in alittle flour (gluten free for me ) and then put them in the hot oil til brown. I blot dry them with paper towels when they're done to try and remove the excess oil. So crunchy and sooooo good!! I use a good olive oil so the fat content is better than like canola or vegetable oils. Not fat free, but fantastic!! To me its better than eating fried chicken!!

Is it possible that anything fried tastes good?

Not good for us, of course.

Just thinking of this thread as I burned my garlic that was sauteing while my back was turned cutting the onions for a 3 bean chili! I was right there! I didn't smell the garlic or the smoking oil. Dam.

I'm eating it anyway. The garlic pieces will be crunchy- that's all.
