i am sort of depressed. i woke up again at 3:30 and had some coffee and then was able to go back to sleep til six. I was listening to cnn and all the flood talk.
I am tired. I think i will be better after new years...i have no plans. I will just play with my kitty cats :-) I had two sweet potatoes last night. i microwaved them and they were delicious. then i read if you boil them you cut the calories in half. I am trying to find food that is satisfying but lower in calories. I ordered more bison tips which are lower in calories than beef and that were on sale. cecilia hasn't called so i don't know if we are going to take a walk. I will go to the senior center. I hope you are feeling better, bobby |
3:30 is so early. I'm glad you were able to go back to bed. I can sleep after lots of coffee too.
I don't have any plans for New Years either. My husband and I haven't done anything in years. He always passes out long before the ball drops. I love sweet potatoes. If I boil them, I usually add half of a white or yellow (Yukon Gold) potato in with them. They taste really good mashed up together. How do you cook the bison tips? I'm glad you're going to the senior center. You'll probably feel better afterwards. |
I got this monster of a sweet potato last week. I baked it for two hours and it was amazing. Had it for 4 meals. Didn't even need butter it was so sweet. The skin fell away and it had this delicious dark, brown coating. Had it for breakfast once. :winky: It must have weighed 2 pounds.

I expected it. then i got an email card from my oldest nephew wishing me a happy new year. I asked him if he were okay and he said yes. he told me about his incredible business trip to the orient............i wonder how miles he fly back and forth to places etc. He said would have lunch or dinner soon. I agree with Mari- the texture is different. They also tend to hold a lot more water when boiled alone...
That's why adding the white/yellow potato helps. My husband won't eat them otherwise. I think they taste gross if you add milk when you mash them, so I use a little chicken broth (don't add it if you don't add another kind of potato). I also use salt, a little butter, and sometimes pepper. If you're going to boil them alone, they cook quickly, so shut off the burner and drain them before they start to break up. Put them back in the pot and put the pot back on the hot burner for a few seconds to sweat off the excess moisture. I wouldn't mash them because it makes the texture less pleasant. Add a little salt, butter (or substitute) and a pinch or brown sugar and stire them gently. I remember you were worried about talking to your nephew too much about Myra. It seems like he won't be at a loss for other conversation. How interesting his life sounds! I'm very glad that you've been able to renew your relationship with your nephews. It seems like at least your oldest nephew is showing a genuine interest. You were missing that connection to your family for a long time and this presents a great opportunity for you to renew it. I can understand why you might have mixed feelings and be nervous. 14yrs is a very long time to not see someone. And you've only reconnected with your nephews because of your sister's death, and I'm sure you're sad that you're unable to see her. :hug::hug::hug: I'm sorry you're going to lose the $2K this year. That sucks. We're also not going to get a cost of living increase for social security benefits this year. I think we got one last year though? I think a "strange mood" is appropriate. You sound a lot better today than you have in a while. Are you going for a walk today, or the senior center? |
