B12 is stored for a "rainy day" in the liver. Some retinol Vit A is also stored. But veggies provide A in betacarotene form which is not toxic in any way and is converted to Vit A as needed by the liver. Almost all other vitamins are excreted when in excess. In fact some B12 is also excreted daily in the bile. I would demand your doctor give you details, and information you could independently look up yourself. It is prudent to avoid iron if you don't need it. That is the only thing--and it is a mineral not a vitamin-- to watch out for. It might be time to find another doctor...think about that. Here is a website that tells what is in your food: http://nutritiondata.self.com/ Here is what is in 8oz of V8 juice for example: http://nutritiondata.self.com/facts/...oducts/10449/2 This is what is in one inner leaf of lettuce: http://nutritiondata.self.com/facts/...roducts/2477/2 Not many vitamins in that one!
