Default Recipes to ward off depression

Thanks ((L1) for posting the pie recipe. I am going to put it here as well. If you think that you might do better with a recipe that is easy and is for a meal rather than dessert, you might want to try this one:
----------------
Hamburger Soup

Cook/brown 1-pound ground round or chuck. You can add fresh chopped onion to cook if you like. Drain off the fat/liquid.

I like to slice 3-4 stalks of celery and saute them in a little bit of oil. You can add the onion here or during the cooking of the beef, which ever is easiest or preferred by you.

Put large can of V-8 juice (64 fluid ounces) into a pot. Add the cooked beef, celery, onion, and one package of Veg-All frozen soup mix (the one that has the okra in it). I prefer to cook the frozen veggies in microwave according to the package & then put into the V-8, but you can just put them in the pot if it will cook for at least 25-minutes.

I like to add a can of Del Monte Whole Kernel Corn and one of Green Giant Cut Green Beens. If you put 2-3 flowered celery tips into the V-8, it will give it a better "salty-taste" than actually using salt!

You can prepare this and then microwave a soup-bowl as wanted.

_______________________
3 graham cracker crusts (Honey Maid)

7 ounce bag Angel Flake Coconut, sweetened (Bakers)
8 ounce cream cheese (Philadelphia)
1 jar of caramel topping (Smucker's Toppings)
***I also use a jar of chocolate :-) and use all of the two jars--yumyum!
14 ounce can of sweetened, condensed milk (Borden Eagle Brand)
1/4 cup butter
2 - 8 ounce [or a 16 ounce] whipped topping (CoolWhip)
chopped nuts for topping

Using mixer, cream the milk & softened cream cheese. Add CoolWhip & fold.
Melt butter in iron skillet. Add coconut to skillet and cook on low until it's light brown.

Heart

This is easy and so pretty on the Christmas table....

Hot Curried Fruits

16 oz. can pinapple rings
16 oz. can peach halves
16 oz. can pear halves
16 oz. can apricot halves
8 oz. jar of cherries
1/8 lb. butter
1 cup brown sugar
2 tsp. curry powder

Drain all fruits. arrange in a shallow glass casserole and pour over them
a mixture of melted butter, brown sugar and curry powder.

Cover and bake in 300 degree oven for about 45 mins.

*whisper..I drive myself crazy trying to create a work of art with this, nestling cherries into apricot halves, peach halves into pinapple rings..yada yada.

Thumbs up Ham & Cabbage Soup

Ham and Cabbage Soup

1 meaty ham bone or 2 large ham hocks. (I could not find these items
in my small town so I used just a large slice of ham - the one with a little
circular bone)
About 6 cups water (I use 3 cans of chicken broth plus some water)
1 can (16 oz) whole tomatoes (I use a can of diced tomatoes)
1/2 teaspoomn dried thyme - crushed
1/2 teaspoon dried marjoram - crushed
1 large onion chopped
1 cup diced carrots
1/2 cup chopped celery
1 cup diced potatoes (I use a lot more - I love potatoes)
3 cups shredded cabbage
salt and pepper to taste

Put ham and water/broth in a stock pot or Dutch oven. Chop up tomatoes and add along with all the liquid. Add thyme and majoram. Bring to a boil, lower heat, cover and simmer for about 1 -1/2 hours until ham is falling off bone. Remove ham and set aside until cool enough to handle.

Add all veggies except cabbage, simmer about 30 minutes until vegs are tender. Meanwhile remove skin and bones from ham and cut into bite size pieces. Add to pot along with cabbage. Simmer 25 - 30 minutes or until cabbage is tender. Season with salt and pepper.
6 servings.

Well Reyn, I made this pie, (or three pies ), and it was delicious! As if there was ever any doubt about that.

My roommates and I will eat two of them and the other one is coming with me to my parents house for Christmas.

Thank you for posting something so easy even I could make it.
