eggs and spinach
 
Bobby... i also like egg with spinach! :) i do it sometimes when we have leftover spinach ... reheat it in a nonstick pan, and then flatten it out and make a dent in the middle, crack an egg or two onto it, cover cook on low - the egg comes out sort of poached in a spinach cradle. i like it with the middle still runny but the white completely cooked. sometimes i mix it all up, spinach and egg, cover and just cook. that comes out more like frittata, even though for frittata you should beat the egg... oh well... i'm for "labor-saving" techniques especially when unwell... i even eat it right out of the pan with the wooden spoon. heh. :)

hehe ... i don't have any recipe ... more like... i throw things together that i have on hand. bobby described what she did in an earlier post. i was just chiming in that i like the egg/spinach combination too, and what i do.

Love hearing about new stuff to put together for a meal. Eating healthy is a challange and this makes it so much more fun. all the different ideas. I also have a receipe for cake on a small scale so a snak of sweets can happen without eating the whole cake.
1 box angel cake food mix
1 box any flavor cake mix
mis these two together in gallon baggie
in microwavable small container:
3tbls cake mix
2 tbl spoons water
mix and then one minute in the micro

This is good for that treat we all need now and then. The rest of the mix can be stored as dry goods and used when ever. Keeps the treats to a minimum but is nice to have once in awhile. ginnie:D

I ate red beans and sausage,very good and sausage link tonight.long island isce teas x two. and the a big margarita. so am very primed. howww hoowww !! happy mardi gra!!!!

i just had veg soup for dinner. i was still full because i stopped at the bar after pdoc's... and had a beer w/ snick snacks - couple of cut flour tortilla triangles with ham(?) and cheese... mmm. and just a few chips. a few hours after dinner i had a piece of bread and slice of salame.

lunch was arugula-tuna-red-onion salad, w/ some of the olive oil from the tuna.
whole meal apple cake with my "morning" coffee.

i have had tuna for lunch the past 3 days. yesterday was exactly the same as today. day before, it was with bread coz no lettuce/greens available and also fish for dinner.

i weighed myself. i weigh exactly the same. :rolleyes: i had hoped for less, but i suppose i should be grateful i don't weigh more, after last week's two 600-calorie fat-n-sugar sessions, on top of "real" meals.

i can't get primed any more. i get a headache (mild, but annoying) long before i get tipsy. :mad::( it sucks! it might have to do with the inderal. the instructions say "do not drink with this medication" but they don't say why.

I like the ground beef we eat. It is extra lean 94% fat free, kind of like eating steak. It only has 130 calories for 4 ounces, lean chicken has 120.I am trying to stay below 100 carbs and below 1800 calories. IT is a slow way to lose weight but that way I am sure to really lose it this time and keep it off.
I gave up alcohol for lent(even though I am not religious), IT was embarressing how much I drank on lundi gras( monday before fat tuesday) and then mardi gras it self.
