Do you have a special dish you make just for the holidays? Main dish, side dish or dessert? Will you share your recipe with us? I'm looking for some ideas for new things to fix and I know we have some good cooks here.
I know we have a "food" forum but it doesn't get much traffic so I thought I'd post this here where more people will see it. If it gets moved...so be it. I make Pecan Logs each year at Thanksgiving & Christmas time and there are never any leftovers. It was my Mom's recipe and it's so easy it's hard to believe that it tastes so incredible! It's easy and makes a great gift. Here's the recipe: Pecan Logs 1 box vanilla wafers 1 14 oz. can sweetened condensed milk 3 C chopped pecans Crush the vanilla wafers into fine crumbs. Save 1/2 C crumbs to roll the pecan logs in. Mix the milk, crumbs and pecans together. Shape into logs...any size you'd like. Roll the logs in the saved crumbs. Wrap in foil or saran wrap and freeze. Slice while still frozen. This can be eaten frozen or thawed. Yummy!!

I miss my mom ... she was quite the baker/cook ... and made 'lady fingers' ... and there was always enough ..
me?? it'll probably be pizza (or venison if someone gets a deer this season!)

My Pumpkin Chiffon Pie was always in great demand at all the Family Thanksgiving get togethers.
I don't have the exact recipe, but I remember using canned pumpkin and pumpkin spices.....cooked it in dbl boiler until done....let it cool...whipped up eggs whites and a bit of sugar untill spiking...then folded it into the pumpkin mix...put the whole mess into a pre-baked (fresh) pie crust and chilled until serving....Yummmmmmmm!!

We always have cabbage rolls with Thanksgiving and Xmas, and I usually make enough to freeze for both occasions. It's a lot of work though, so unless someone is prepared to spend most of a day making them, probably not much point writing out the recipe. They do freeze up nicely though.
Your pecan log sounds yum, Kelly. That is so easy, I think I might have to try it. I make a fairly easy, make-ahead brocolli, carrot and cauliflower BAKED in cheese sauce dish (easier to make then say ), but I'll have to try to dig up the recipe so I don't forget anything ... Cherie

My dish that I make is one that I am very tired of now. I just call it the orange jello salad.
1 large box instant orange jello 1 small can crushed pinapple, drained 1 small can mandarin oranges, drained 1 medium small curd cottage cheese 1 meium tub cool whip Just mix it up together and refrigerate for about an hour. I have substituted starwberry jello and fresh strawberries in this but the acid inthe strawberries turns the salad into liquid if not eaten quickly. Like I said, I am tried of it but the family has to have it and it isn't expensive at all and very quick to make. I save the drained fruit juce and drink it the next morning when I'm dead tired. |

Broccoli Casserole Which is super easy.
2 pkgs Chopped Broccoli cooked and drained 2 eggs 2 Cups of Cheddar Cheese (divided = 1/2 cup for topping) Italian Bread Crumbs 2-3 strips of bacon Crispy and crumbled. 1 Cup of Mayo. (I am from Virginia we use Duke's! The rest jus don't taste right) Preheat oven to 350 mix Broccoli, Eggs, Mayo, 1 1/2C cheese in a bowl, Place in Casserole dish. In another bowl mix remaining cheese, bacon and about 1/4 C bread crumbs. Sprinkle this mixture over casserole. I also sprinkle a little parmesean cheese on top. Bake 30-40 minutes until golden. You have to let this sit for at least 30 minutes before serving or it will not set properly. But it is yummy! I also make rum balls for the adults, and if anyone happens to snag some deer meat, I LOVE making jerky for christmas. |

We make homemade pierogis for Christmas eve every year. They are
alot of work but deeelicious. This will be the first year making them without my Grandma, she passed away last January. I hope we can do it without her.

DH and I LOVE pierogies! We get them from a speciality market in the city. They have all different kinds including mushroom and also ones with sauerkraut, delicious. If you have a recipe you would be willing to share I'd love to give it a try.

I make many things but the one thing that is in demand is my corn beef dip.
2 packages of Budding corned beef (you can use the store brand as well) 1 16 oz. container of cream cheese softened (regular or lite) 1 bunch of green onion 1tbs mayonaise 1tbs of lemon juice Ritz crackers Chop or cut the corned beef and green onion into small pieces. Mix into cream cheese. Add mayo and lemon juice and mix well. Serve with Ritz crackers or cracker of choice. This is a very good dip and makes a great presentation for the holidays with it's green, red and white colors. I usually let it sit in the fridge overnight to let the flavors mix well.
